This is a recipe my husband Dan created so we could flavor our meats, vegetables, grains….anything that needs to kick it up a notch. I love that it’s homemade and I know everything that is in it. Fresh, whole-foods, no preservatives!
-Green Salsa-
Ingredients:
10-12 Tomatillos outer “paper” removed and cut in half
3-4 Jalapenos cut in half lengthwise
2 onions quartered
1 bunch of cilantro, washed and cut off the stems that don’t have leaves, keep the “head”
Minced Garlic 2 tblsp
Lime Juice 1 cup
Water 1 cup
Oregano 1 tblsp
Salt to taste
Pepper to taste
How To:
Preheat oven to 500 or on Broil
Place Tomatillos and Jalapenos cut side down on a baking pan
Broil for 7-8 min or until tops are browned
Place equal amounts of tomatillos, jalapenos, onions, cilarntro, garlic,lime juice, water, oregano, salt and pepper into blender and blend until smooth.
Put salsa into a pot and slowly heat to a boil. Boil for 10-15 min. Let cool slightly and put into glass container and fully cool.
